ShareThis recipe is a flavorful dish that combines aromatics and hearty lentils in just under twenty minutes. Lentils are a great source of plant based protein. They also help support the digestive system and manage blood sugar levels. INGREDIENTS: 1/2 onion, chopped 3 cloves garlic, chopped 1 2 tsp fresh ginger, chopped fine 1 tsp turmeric 1 tsp cumin 3 cups red lentils 8 cups water 1 cup fresh spinach 1 Tbsp salt INSTRUCTIONS: 1. Set your pressure cooker on saute mode; saute? onions, garlic, and ginger with a little water. 2. Add turmeric and cumin and saute? a few more minutes. 3. Add Lentils and water. Push cancel on electric pressure cooker 4. Put lid on and set time fro 8 minutes. Release the steam when done and add spinach and salt.
